Ingredients:
- 1 medium-sized spaghetti squash

- 1 cup broccoli florets
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce (or tamari for a gluten-free option)
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon red pepper flakes (optional, for spice)
- Salt and pepper to taste
- Green onions and sesame seeds for garnish
Instructions:
Preheat your oven to 375°F (190°C).
Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the squash halves on a baking sheet, cut side up. Roast in the oven for about 40-45 minutes or until the squash is tender and the strands can be easily scraped out with a fork.
While the squash is roasting, prepare the stir-fry. Heat vegetable oil in a wok or large skillet over medium-high heat.
Add the protein of your choice and cook until browned and cooked through. Remove the protein from the wok and set aside.
In the same wok, add a bit more oil if needed. Stir-fry the broccoli, bell pepper, and carrot until they are tender-crisp.

Season with salt and pepper to taste.
